Why is knowing what percentage of Wagyu you are considering important? For the person who is looking for that "Kobe Beef" experience that is produced in Kobe, Japan, it is important to understand why. First, the Wagyu breed is the breed that made "Kobe Beef" famous. In order to be called "Kobe" it has to come from Kobe, Japan. The American Wagyu Association have certified that our Wagyu DNA linage can be traced back to the original imports of Japanese cattle therefore they are classified 100% Fullblood Japanese Wagyu. Secondly, It is impossible to produce that extreme marbling, intense buttery flavor if it is not a Fullblood 100% Japanese animal to start with. Although there are many thoughts on what goes into producing the "Kobe Beef" experience the first is being 100% Wagyu. Careful attention to nutrition, husbandry and daily needs is what brings about that exceptional marbling and intense flavor.
In the United States, the term "American Wagyu" has been used for any cattle that have any percentage of Wagyu influence. You will often see "American Wagyu" which typically is a percentage of Wagyu but not 100% Wagyu.
In order for the American Wagyu Association to classify an animal Purebred they have to meet the requirement of being 93.75% Wagyu. Meaning sometime in their life they have had a different breed in their linage. This produces a product that is tender and rich in flavor.
Known by Wagyu breeders as an F1. F1 at our farm is meat produced by breeding a Angus cow and a Wagyu bull hence the term 50%/50% or F1. Some of the most tasty beef available at an affordable price.
